Brie, Avocado, Pesto & Pea Shoot Sandwich Recipe… Fresh & Yum

Hello friends!  I’ve decided that now is the perfect time for a Favourite Things post. 🙂

Why?  Because last week I posted a loooong article on Understanding Google Apps for parents like me who grew up using MS Office.  With many kids going back to school and doing online learning, I wanted to help parents understand Google Apps and Google Classroom so that they can feel a bit more informed and a lot more prepared.  If you have kids, or your friends have kids, check it out and share!

Anyway, this week let’s go with something a little more simple & fun, and a lot more delicious!  

All Things Summer

Every summer I find myself drawn to a few favourite things that bring a little extra contentment and joy to my days.  Whether it’s reading a new novel on the porch in the morning before the kids wake up, enjoying my favourite summer drink (just in case you’re wondering, this year it’s XOXO Sangria in a glass loaded with ice), or lining up for ice cream at Shaw’s, I so enjoy these moments.

I’ve even come to have a favourite summer sandwich recipe this year.  I make it and eat it almost every. single. day.

It’s so good that I have taken pictures of it and sent it to my friends.  This is noteworthy because I’m not someone who takes pictures of food and posts it on social media.  In fact, I hardly take pictures of my kids and post them.

The point is, this sandwich is beyond yummy.  I just made it for my sister a few days ago and the first words out of her mouth were “I have to make this!”


Now, if you’ve read along this far, you’re probably assuming that I’m an amazing cook who is always whipping up wonderful and unique creations in the kitchen while blue birds chirp at my window sill above my cooling pies.  The truth is, I’m not even a good enough chef to have written that last sentence.  

I am a mediocre cook at best.  I have a few comfort food dishes that I’m known for (think chile, mac & cheese and deep fried cheese curds), but I can’t seem to coordinate more than two burners going at one time and I’d rather be doing most other things than be cooking in a kitchen.

Hence, this is not a food blog or a recipe blog.

But here’s why you should make this!  You can be guaranteed that if I post a recipe, not only is it super easy and absolutely anyone can make it, but, it will actually taste really amazing!  This is because I’ll only ever post super simple and delicious recipes that I think other moms and friends will love. 

Now I feel like I’ve just made an argument for why you should always try recipes from blogs by moms who can’t cook very well.

Back to the Summer Sandwich of 2020

Sandwich Recipe

Here are the magic ingredients:

Bread of your choice (sour dough, bagel, croissant, gluten-free bread, etc.)
Pesto
Avocado
Brie
Pea Shots
Salt & Pepper

Directions:

Toast bread (I use 1 slice because I prefer it open face)
Spread pesto
Add avocado, then salt & pepper to taste
Add brie
Top with pea shoots (lots of ’em… I like to just use the leafy parts but you can use the stems & leafy bits too!)

Eat it (with some Sangria maybe).  You’re welcome.

Tips

I have tried this sandwich recipe using sourdough, gluten-free bread, croissants and bagels.  So far my favourite is sourdough but all are delish.  My friend prefers a croissant and she melts the brie on top of it in the oven first.  I tried it and it’s a definite win too!

I also have a favourite pesto… Kirkland brand from Costco.  It has lots of parmesan in it compared to the others and is soooo good.  It comes in a big jar that I would never use up before the expiration date so I pour smaller amounts into little mason jars and freeze them until I need more. 

The picture above probably makes it look like I made homemade pesto but trust me, that did not happen.

Another friend (and lover of favourite things) I shared my sandwich recipe with purchased the ingredients to make the #SSof2020 and she went with these little individual Bries from Costco.  Brie tends to go bad fairly quickly so I’ve been buying these now and they will be very convenient to bring to work in my lunch.

I find it tastes best when you put the salt & pepper on the avocado.  If I was a real chef I might know the reason why. But, I don’t know.  I’m sorry.

Nutritional Information

I have no idea.  I just know it tastes fresh and delicious.  I also figure that with all of those green, leafy pea shoots on top, it must be kind of healthy.

A Note About Pea Shoots

Firstly, who knew pea shoots were even a thing?  Apparently most of my friends did.

I saw pea shoots for the first time on Amy Schumer Learns to Cook on Food Network.  If you haven’t watched the show, I totally recommend it.  Not only is it really funny but the recipes her husband makes are awesome.  And you can find all of his recipes here

I began my search for pea shoots while trying out his guacamole recipe.  It was fantastic.  It also inspired me to buy shallots for the first time.  Amy is such a terrible cook that I felt a connection and so became a loyal viewer.  Maybe she’ll try my sandwich.  On a side note, they just announced that they are filming a new season and I can’t wait!


Simple pleasures matter so I hope you take a few minutes to treat yourself to a SSof2020 and a glass of Sangria.
